Many environmentally-minded Americans are content spending money at Whole Foods, recommending An Inconvenient Truth to friends and recycling when they remember. But as the Assistant Field Production Manager of Jacob’s Farm, Emily Freed is not only responsible for six farms and a total of over 250 acres of organic culinary herb farmland on the California coast, she has also taken on the responsibility of bringing the issues of sustainability, ecological preservation, and the local and organic food movements into focus for the Jewish community at large.
